Sicilian Salads
Three simple Sicilian Salad recipes
I. Ingredients Sicilian Orange Salad
3 Navel Oranges (Medium)
3 Tablespoons Oil (Extra Virgin)
1 Teaspoon Salt
I. Method
- Peel oranges.
- Cut oranges over a salad bowl (to collect juice) across segments into one
centimetre cubes and put into salad bowl.
- Add oil to bowl.
- Add salt to bowl.
- Mix ingredients well.
- Refrigerate.
Serve as a side salad with chunks of Ciabatta bread.
II. Ingredients Sicilian Fennel Salad
2 Fennels (Large)
3 Tablespoons Oil (Extra Virgin)
1 Teaspoon Salt
II. Method
- Remove outer layers of Fennel and discard.
- Cut remaining fennel into one centimetre cubes and put into salad bowl.
- Add oil to bowl.
- Add salt to bowl.
- Mix ingredients well.
- Refrigerate.
Serve as a side salad with chunks of Ciabatta bread.
III. Ingredients Sicilian Potato Salad
4 Desiree Potatoes (Medium)
4 Tablespoons Oil (Extra Virgin)
Parsley
1 Teaspoon Salt
III. Method
- Boil potatoes and when cooked let cool.
- Cut potatoes into one centimetre cubes and put into salad bowl.
- Wash parsley and chop finely and add to bowl
- Add oil to bowl.
- Add salt to bowl.
- Mix ingredients well.
- Refrigerate.
Serve as a side salad with chunks of Ciabatta bread.
