Southern Grilled Prawns

Ingredients for Prawns

8 Large Prawns
1 Cup Olive Oil
1 Teaspoon Sea Salt
Dash of Tabasco Sauce
30 g Butter
Black Pepper (Coarsely Crushed & Lots of it)
Juice of One Lemon
1 Tablespoons Worcestershire Sauce

Ingredients for Green Mayonnaise

1 Cup Mayonnaise
1 Clove Garlic (Crushed)
1 Cup Mixed Herbs (Fine Chopped & Including Tarragon, Parsley, Chives, Spring Onion Tops & Dill)
½ Cup Sour Cream
Pepper & Salt

Method for Prawns

  1. Remove rack from a grill pan and lay the prawns in a single layer in the pan.
  2. Drizzle the oil over the prawns.
  3. Sprinkle on lots of black pepper until the prawns are black.
  4. Sprinkle over the salt, lemon juice, Tabasco & Worcestershire sauce.
  5. Dot with butter.
  6. Cook prawns under a pre-heated grill for 15 - 20 minutes (or until prawns are cooked through).
  7. Add shallots, cream, salt & pepper, stir well until combined and simmer until sauce just boils
  8. Spoon sauce over fish and sprinkle with parsley

Method for Green Mayonnaise

  1. Mix all the ingredients together thoroughly with a wire whisk

Serve the prawns hot direct from the grill with the Green Mayonnaise in a side bowl for dipping to taste. This is an extra spicy dish and serves four.
