Spaghetti Carbonara
Serves: 4 people
Ingredients
250g prosciutto ham
250ml (1 cup) freshly grated Parmesan
3 eggs
500g spaghetti
125g (1/2 cup) butter (in small pieces)
Method:
1. To start; dice the prosciutto ham into small pieces.
Beat the eggs gently with a fork and add 1/3 cup of the Parmesan
along with the prosciutto ham.
2. Add the spaghetti to a pot of rapidly boiling salted
water, and cook until "al dente".
3. Drain the spaghetti, then replace in the cooking
pan and mix with butter. Once the butter has melted and while
continually mixing, quickly add the egg and cheese mixture.
Note: This process must be performed immediately after
draining and replacing the spaghetti in the pan, so that the
egg is allowed to cook from the retained heat in the pan.
4. Serve immediately; sprinkle the remaining Parmesan
over each serving.
Tip: The better quality parmesan you use, the better
the dish will taste, so it's worth finding a brand or style
that you really like. Also, some people like to use bacon instead
of the more traditional prosciutto, and garlic won't hurt this
dish either.
