Spaghetti With Eggs

Serve your Spaghetti With Eggs garnished with a sprig of parsley and a sprinkling of Parmesan cheese. Get the freshest eggs you can, ideally from the farm yard, and you'll be amazed by the taste. Serves four.

Ingredients:

125g Spaghetti
1 Large Green Pepper (Chopped)
1 Large Onion (Chopped)
60g Butter
3 Eggs
65ml Milk
½ Teaspoon Salt
¼ Teaspoon Black Pepper
Several Sprigs Parsley
Parmesan Cheese (Grated)

Method:

  1. Cook the spaghetti in boiling water until tender then drain.
  2. Saute the pepper and onion in two tablespoons of butter until the onion is golden brown.
  3. Add the spaghetti and the remaining butter to the pepper and onion mixture and mix well.
  4. Beat together the eggs, milk, salt and pepper.
  5. Stir into the spaghetti mixture until the eggs are cooked.
