Strawberry Cheesecake

Ingredients for Base
225g Chocolate Ripple Biscuits
0.5 Cup Melted Butter
Method for Base
1 Thoroughly mix together.
2 Press into a 20 cm spring tin.
Ingredients for Filling
450g Cream Cheese
0.5 Cup of Sugar
1 Cup of Whipped Cream
1 Tablespoon Gelatine Dissolved in 0.25 Cup of Brandy

1 Pkt. Strawberry Jelly
1 Cup of Hot Water
1 Punnet of Fresh Strawberries
Method for Filling
1 Cream all the Filling ingredients (up to -------- above) together till fluffy.
2 Spread half the mixture on the base.
3 Chill.
4 Dissolve the Strawberry Jelly in the Cup of Hot Water and stir until the jelly is the consistency of a raw egg white.
5 Wash Strawberries and arrange half over the Base.
6 Spoon on Jelly and let sit for about 2 - 4 hours.
7 Spread the remaining Filling mixure over the Jelly and Strawberries already added to the Base.
8 Decorate the top with whipped cream and remaining strawberries.
