Strawberry Crêpes

Ingredients
1¼ Cups Milk
1 Egg Yoke
1 Cup All Purpose Flour (Sifted)
2 Tablespoons Sugar
2 Oranges
1 Tablespoon Grand Marnier
2 Tablespoons Icing Sugar (Sifted)
1 Egg
1 Tablespoon Butter (Melted)
¼ Teaspoon Salt
1 Box Strawberries (Sliced)
Method
- Place milk, egg, egg yoke, butter, flour, salt and sugar in a blender.
- Blend for one minute or until batter smooth.
- Oil a crêpe pan.
- Pour in a spoonful of batter.
- Rotate the pan in all directions to cover the pan base evenly with batter.
- Tip out any excess batter.
- Cook on low heat until crêpe is lightly browned (about 1 minute).
- Turn and brown the other side.
- (Discard the first crêpe as it will be oily).
- Make 12 crêpes and put aside.
- Grate the rind off the oranges.
- Combine the sliced strawberries with the grated orange rind.
- Cut oranges into segments (cutting between membranes).
- Add orange segments, sugar and Grand Marnier to straberry and orange rind mix.
- Fill each crêpe with the fruit mix and roll each into a sausage shape.
- Place the rolled crêpes into a buttered baking dish.
- Dot the surface of the crêpes with butter.
- Place in oven and bake for about 15 minutes at 175ºC.
Serve hot dusted with sifted icing sugar and whipped cream or ice-cream. Serves 6.
