Strawberry Flambe

Ingredients

1 Lemon
½ Cup Sugar
½ Cup Brandy
2 Oranges
2 Punnets Strawberries

Method

  1. Remove rind from oranges and lemon in large strips, taking care not to include any of the white pith.
  2. Squeeze juices from oranges and lemon into a saucepan.
  3. Add sugar and orange and lemon rinds to the saucepan.
  4. Cook contents of saucepan slowly to create a syrup slowly pressing ring with a spoon to extract as much flavour as possible.
  5. Cook for 5 minutes.
  6. Hull the strawberries (Hulling is the removal of the stem, leaves and the white "root" of leaves from the strawberry).
  7. Add the hulled strawberries to the saucepan, spooning the syrup gently over the them until covered.
  8. Warm the brandy in a small pan, pour over the strawberries and set a flame.

Serve with cream or spoon over vanilla ice cream. Serves 6.
