Strawberry Flambe
Ingredients
1 Lemon
½ Cup Sugar
½ Cup Brandy
2 Oranges
2 Punnets Strawberries
Method
- Remove rind from oranges and lemon in large strips, taking care not to include any of the white pith.
- Squeeze juices from oranges and lemon into a saucepan.
- Add sugar and orange and lemon rinds to the saucepan.
- Cook contents of saucepan slowly to create a syrup slowly pressing ring with a spoon to extract as much flavour as possible.
- Cook for 5 minutes.
- Hull the strawberries (Hulling is the removal of the stem, leaves and the white "root" of leaves from the strawberry).
- Add the hulled strawberries to the saucepan, spooning the syrup gently over the them until covered.
- Warm the brandy in a small pan, pour over the strawberries and set a flame.
Serve with cream or spoon over vanilla ice cream. Serves 6.
