Stuffed Fillet of Beef



Ingredients:

3 Onions (Diced)
4 Anchovy Fillets (Chopped)
Pepper (Pinch)
Parsley (Pinch & Finely Chopped)
1kg Beef Fillet
1 Tablespoon Olive Oil
2 Tablespoons Bacon (Finely Chopped)
Dried Thyme (Pinch)
1 Egg Yoke
Watercress Sprigs

Method:

  1. Pre-heat oven to 160º.C
  2. Fry onions in a pan with oil until golden brown.
  3. Place fried onion in a mixing bowl.
  4. Add anchovy fillets, bacon, pepper, parsley, thyme and egg yoke to mixing bowl.
  5. Mix well.
  6. Cut the beef fillet lengthwise in about 6 places [do not cut right through].
  7. Stuff the stuffing equally into each cavity.
  8. Bind the beef fillet back into shape with string.
  9. Wrap the fillet in foil and place in a roasting dish.
  10. Add a small amount of olive oil to the dish and cover with a lid.
  11. Place in pre-heated oven and cook for 1½ hours or until tender.
  12. Remove string before serving

Serve your Stuffed Beef Fillet cut into largish slices on a bed of mash potato surrounded by green beans and topped with watercress sprigs. Goes down well with a nice Red Wine.
