Ingredients:
1 Onion (Chopped)
3 Tablespoons Olive Oil
6 Tablespoons Raw Rice
4 Tablespoons Pine Nuts
340g Minced Beef
Pinch of Fresh or Dried Mint (A Pinch is 1/8 of a Teaspoon)
Dash Cinnamon (A Dash is 1/16 of a Teaspoon)
Largevine Leaves (Grape) or Young Spinach Leaves
150ml White Wine
Water
Salt & Pepper to Taste
Method:
- Fry onions in the olive oil in a pan.
- Add the rice and fry until golden.
- Add the pine nuts and toast for one minute.
- Remove pan from heat and mix in meat, mint, salt, pepper and cinnamon.
- Lay each leaf out flat and place a tablespoon of the mixture on each leaf.
- Roll the leaf into "sausage" shape taking care to tuck in the ends.
- Place the rolled leaves into a casserole dish, pour over wine and add water to cover.
- Cook over medium heat for about 45 minutes, adding hot water if needed to keep vines covered
- After 45 minutes allow the water to simmer away.
