Stuffed Vine Leaves

Stuffed Vine Leaves (or Waraa' 3inab) is a Middle Eastern dish commonly served as an appetiser. It can be served hot or cold. Serves six.

Ingredients:

1 Onion (Chopped)
3 Tablespoons Olive Oil
6 Tablespoons Raw Rice
4 Tablespoons Pine Nuts
340g Minced Beef
Pinch of Fresh or Dried Mint (A Pinch is 1/8 of a Teaspoon)
Dash Cinnamon (A Dash is 1/16 of a Teaspoon)
Largevine Leaves (Grape) or Young Spinach Leaves
150ml White Wine
Water
Salt & Pepper to Taste

Method:

  1. Fry onions in the olive oil in a pan.
  2. Add the rice and fry until golden.
  3. Add the pine nuts and toast for one minute.
  4. Remove pan from heat and mix in meat, mint, salt, pepper and cinnamon.
  5. Lay each leaf out flat and place a tablespoon of the mixture on each leaf.
  6. Roll the leaf into "sausage" shape taking care to tuck in the ends.
  7. Place the rolled leaves into a casserole dish, pour over wine and add water to cover.
  8. Cook over medium heat for about 45 minutes, adding hot water if needed to keep vines covered
  9. After 45 minutes allow the water to simmer away.
