Sweet & Sour Pork Recipe

Thank you Rita from Victoria for this mouth watering Pork recipe.

Note: The secret to cooking pork to a golden crisp finish is double frying. Cubes of pork a fried in peanut oil until almost cooked and then drained. Oil must be bought back to boiling point and then pork re-fried for about 5 seconds only, until golden and crispy. The dish must be served immediately combined with the sauce.

Ingredients

½ kilo Pork Fillet
2 Teaspoons Dry Sherry
1 Tablespoon Soy Sauce
2 Teaspoons Cornflour
Oil for Deep Frying
1 Tablespoon Plain Flour

Ingredients for Sauce

3 Green Peppers
1 Onion
1 Carrot (Cooked) 1 Bamboo Shoot
2 Slices Fresh Pineapple
3 Tablespoons Sugar
1 Tablespoon Dry Sherry
1 Tablespoon Vinegar
2 Tablespoons Tomato Sauce
2 Tablespoons Cornflour
½ Cup Water
3 Tablespoons Oil
1 Tablespoon Soy Sauce

Method

1 Prepare sauce first.

2 Cut all vegetables and pineapple into 2½cm squares.

3 Heat oil and saute prepared vegitables.

4 Mix sugar, soy sauce, dry sherry, vinegar, tomato sauce together and add to vegetables.

5 Stir in pineapple.

6 When boiling add cornflour blended with water.

7 Cook and stir well until mixture thickens and boils.

8 Keep hot while preparing pork.

9 Cut pork into 2½cm cubes.

10 Mix pork cubes well with sherry, soy sauce, plain flour and cornflour.

11 Fry in hot oil until cooked and golden.

12 Drain.

13 Reheat oil.

14 Add pork to oil and remove again almost immediately.

15 Pour hot sauce over and serve.
