Sweet Potato Casserole
Ingredients For Casserole Mix
3 Cups Mashed Sweet Potatos
1 Cup Sugar
2 Eggs (Well Beaten)
1 Teaspoon Vanilla Flavoring
1/3 Cup Milk
½ Cup Butter or Margarine or Diet Margarine
Ingredients For Topping
½ Cup Firmly Packed Brown Sugar
¼ Cup Plain Flour
2½ Teaspoons Melted Butter or Margarine or Diet Margarine
2/3 Cup Chopped Pecan Nuts
½ Bag Miniature Marshmallows
Method For Casserole Mix
1 Combine all casserole ingredients and fold together until well blended.
2 Pour ingredients into a one litre baking casserole dish.
Method For Topping
1 Blend all topping ingredients (except marshmallows) together in mixing bowl.
2 Pour blended topping over the sweet potato mixture in the casserole dish.
Method
1 Put casserole in oven and bake at 175ºC for 25 minutes.
2 Top with marshmallow and cook until golden brown.
3 Remove from oven and let set until slightly cooled. ready to eat.
