Swordfish Teriyaki

Serves: 3-4 people

Ingredients:
Swordfish steaks (4)
Soy sauce (6 tablespoons)
One quarter cup mirin (sweet rice wine)

Method:

1. Combine soy sauce and mirin, marinate fish in mixture for half an hour and put the marinade to one side for use later.

2. Either broil fish, or cook on a barbecue for about three to five minutes on each side (be very careful not to overcook).

3. Reduce marinade in sauce pan and finally brush on the fish and serve with your favourite garnish.

Tip: Garnishes can include anything you like, from chillies to lime slices, lemongrass or even dill. Just remember not to over do it, as the marinade is key flavour in this dish.
