Tea Cake
Ingredients:
170g Flour (Self Raising)
Salt (Pinch)
55g Butter
85g Sugar
1 Egg
4 Tablespoons Milk
Teaspoon Cinnamon
Method:
- Grease an ovenproof 18cm (approx) cake tin.
- Sift flour and salt into a mixing bowl.
- Cream butter and sugar, add egg and beat well.
- While beating add flour and milk alternatively.
- Pour mixture into the tin and bake in a moderate overn for 20-25 minutes.
- Remove from oven and while hot brush with butter and sprinkle with cinnamon and sugar.
This simple Tea Cake is always an afternoon tea speciality. Slice and spread each serve with butter or a dollop of cream and enjoy with a cup of tea or coffee.
