Ingredients:
1 Medium Onion (Chopped)
40g Butter
1 Clove Garlic (Minced)r
500g Tomatoes (Washed & Halved)
500g Mushrooms
Salt
Black Pepper (Freshly Ground)
Chives (Chopped)
Method:
- Saute the onion in the butter until transparent.
- Add the garlic and cook until the onion is golden brown.
- Add the tomatoes and cook for five minutes.
- Wipe mushrooms with a damp cloth and, if large cut in half, otherwise leave whole.
- Add to the tomatoes and cook for ten minutes.
- Season to taste with salt and pepper.
- Serve sprinkled with chives.
