Tropical Chicken
Ingredients:
1 Chicken
55g Butter
1 X 450g Can Pineapple Rings
Pepper
Method:
- Pre-heat oven to 230ºC.
- Place chicken in baking dish and sprinkle with pepper.
- Melt butter in pan and pour in juice from pineapple can.
- Spoon ½ of the butter / pineapple juice mix over chicken.
- Bake in oven for approximately 20 minutes.
- Spoon the rest of the butter/pineapple juice mix over the chicken.
- Lower oven to 175ºC and roast chicken until cooked, basting occasionally.
- Remove chicken from oven and chicken from baking dish and carve serving proportions.
- Place pineapple rings in baking dish and return to oven and bake for about 2 minutes, turning rings at half way mark.
Serve your Tropical Chicken by placing a pineapple ring on each serve of chicken. A lovely sweet tangy taste with a summer feel. Serve with an assortment of summer vegetables.
