Unfried "Fried" Red Snapper
4 red snapper filets (or similar fish)
1/4 cup soy sauce (65ml)
3 chopped scallions
4 tablespoons minced ginger root
1/2 sesame (or other vegetable-based oil)
1. Boil lightly salted water in sauce pan. Boil each filet
until tender, being careful not to overcook.

4. Heat oil carefully until boiling, then pour over
fish so that it sizzles and serve quickly. Ideal as an appetiser
or accompanied with sparse but well dressed salad.
