Veal Parmagiana

Ingredients
1 Kg Veal
250g Mozzarella Cheese
1 Egg
1 Tablespoon Grated Parmesan Cheese
Salt & Pepper
1 Can Tomatoes
2 Tablespoons Flour
½ Cup Breadcrumbs
Oregano
Method
- Cut veal into serving slices.
- Cut Mozzarella cheese into slices.
- Beat egg until liquid.
- Drain can of tomatoes.
- Roll each veal slice in flour and then dip in beaten egg.
- Coat each veal slice in breadcrumbs and Parmesan cheese.
- Fry veal slices in a little oil until golden brown.
- Place each veal slice in an oven proof dish.
- On each slice of veal place some slices of Mozzarella and crushed tomato.
- Sprinkle oregano and pepper and salt to taste over all.
- Bake in moderate oven for one hour.
