Veal Scaloppine

Serve your Veal Scaloppine with a side dish of scalloped potatoes, honeyed baby carrots and blanched broccoli. Veal provides an excellent low-fat source of protein and also B vitamins and zinc.

Ingredients:

750g Veal Cutlets (Without Bone)
¼ Cup Flour
½ Cup Butter (or Margarine)
2 Teaspoons Lemon Juice
1 Cup Marsala (or Dry White Wine)
Salt & Pepper

Method:

  1. Flatter meat.
  2. Mix together the flour and salt & pepper.
  3. Coat the meat with the mixture.
  4. Melt butter (or margarine) in a fry pan and brown veal over a high heat on both sides (for about two minutes on each side).
  5. Mix together the lemon juice and wine and pour over the meat.
  6. Reduce the heat, cover the saucepan and cook for another two minutes. Do not boil.
