Vegetable Rice Pie

Thank you Wendy from WA for this tasty, nutritious winters meal:

Ingredients for Shell

1 Cup Uncooked Long Grain Rice
30g Butter
1 Small Onion
1 Egg
1 Teaspoon Curry Powder
Seasoning to Taste

Ingredients for Filling

30g Butter
4 Small Zucchinis
2 Onions
3 Sticks Celery
110g Mushrooms
1 Medium Carrot
¾ Cup Sour Cream
1 Egg
2 Tablespoons Plain Flour

Method for Shell

  1. Cook rice.
  2. Melt butter in pan and saute onion.
  3. Add butter & sauted onion to cooked rice.
  4. Add lightly beaten egg and seasoning to rice.
  5. Mix ingredients well.
  6. Press mixture into a 230mm (approx) pie plate covering base and sides.

Method for Filling

  1. Cook rice.
  2. Melt butter in pan and cook sliced zucchinis, chopped onions, thinly sliced celery, mushrooms and grated carrot for 3 minutes.
  3. Season with salt & pepper.
  4. Combine sour cream & flour with beaten egg.
  5. Mix well and stir into vegetables.
  6. Spoon mixture into rice shell.
  7. Bake for 40-50 minutes in a moderate oven.

Serve hot as your main meal for the day.
