Vegetable Rice Pie

Ingredients for Shell
1 Cup Uncooked Long Grain Rice
30g Butter
1 Small Onion
1 Egg
1 Teaspoon Curry Powder
Seasoning to Taste
Ingredients for Filling
30g Butter
4 Small Zucchinis
2 Onions
3 Sticks Celery
110g Mushrooms
1 Medium Carrot
¾ Cup Sour Cream
1 Egg
2 Tablespoons Plain Flour
Method for Shell
- Cook rice.
- Melt butter in pan and saute onion.
- Add butter & sauted onion to cooked rice.
- Add lightly beaten egg and seasoning to rice.
- Mix ingredients well.
- Press mixture into a 230mm (approx) pie plate covering base and sides.
Method for Filling
- Cook rice.
- Melt butter in pan and cook sliced zucchinis, chopped onions, thinly sliced celery, mushrooms and grated carrot for 3 minutes.
- Season with salt & pepper.
- Combine sour cream & flour with beaten egg.
- Mix well and stir into vegetables.
- Spoon mixture into rice shell.
- Bake for 40-50 minutes in a moderate oven.
Serve hot as your main meal for the day.
