Ingredients:
500g Zucchini (Cut Into Slices)
30g Butter
2 Tablespoons Plain Flour
550ml Milk
Salt & Pepper
¼ Teaspoon Nutmeg
2 Eggs (Lightly Beaten)
½ Teaspoon Salt
¼ Teaspoon Pepper
Method:
- Melt ½ the butter in a saucepan.
- Add the zucchini and saute until lightly browned.
- Melt the remaining butter in another saucepan and stir in the flour.
- Cook for one minute and then slowly add milk, stirring constantly.
- Add salt & to taste and nutmeg.
- To this cream sauce add the eggs, cheese, salt and pepper and mix thoroughly.
- Gently stir in the fried zucchini.
- Butter and flour a casserole dish.
- Pour in the zucchini mixture and put the casserole dish in a pan of hot water
- Bake in a 190ºC oven for 45 minutes.
- Remove from oven and allow to stand for a few minutes before turning out onto a serving dish.
