Zucchini Casserole

Zucchini Casserole is a stand alone dish best served hot. Zucchini fruit is low in calories and contains useful amounts of fol ate, potassium, vitamin A and manganese. Serves 4-6.

Ingredients:

500g Zucchini (Cut Into Slices)
30g Butter
2 Tablespoons Plain Flour
550ml Milk
Salt & Pepper
¼ Teaspoon Nutmeg
2 Eggs (Lightly Beaten)
½ Teaspoon Salt
¼ Teaspoon Pepper

Method:

  1. Melt ½ the butter in a saucepan.
  2. Add the zucchini and saute until lightly browned.
  3. Melt the remaining butter in another saucepan and stir in the flour.
  4. Cook for one minute and then slowly add milk, stirring constantly.
  5. Add salt & to taste and nutmeg.
  6. To this cream sauce add the eggs, cheese, salt and pepper and mix thoroughly.
  7. Gently stir in the fried zucchini.
  8. Butter and flour a casserole dish.
  9. Pour in the zucchini mixture and put the casserole dish in a pan of hot water
  10. Bake in a 190ºC oven for 45 minutes.
  11. Remove from oven and allow to stand for a few minutes before turning out onto a serving dish.
