Zucchini Loaf

Ingredients
3 Eggs
2½ Cups Castor Sugar
1 Cup Oil
2 Cups Zucchini (Grated)
1 Cup Walnuts (Chopped)
1 Teaspoon Salt (Flat)
1 Teaspoon BiCarb Soda
¼ Teaspoon Baking Powder
3 Teaspoons Cinnamon
3 Cups Plain Flour
1 Teaspoon Vanilla (Optional)
Method
- Sift together the flour, salt, bicarb soda, baking powder & cinnamon into a bowl put to one side.
- Lightly grease and line base of two loaf shaped over proof dishes.
- Beat eggs until light and foamy.
- Add sugar, vanilla and oil and beat until thick and mousse like.
- Stir in grated zucchini.
- Fold in flour mixture and walnuts.
- Pour mixture into oven dishes.
- Bake in a moderate oven set at 175°C for 1 to 1½ hours.
- Test if cooked through with skewer.
When it cools slice a big piece and enjoy with a cup of tea or coffee.
