Zucchini Loaf

Thank you Andrew from Queensland for this healthy and tasty cake recipe:

Ingredients

3 Eggs
2½ Cups Castor Sugar
1 Cup Oil
2 Cups Zucchini (Grated)
1 Cup Walnuts (Chopped)
1 Teaspoon Salt (Flat)
1 Teaspoon BiCarb Soda
¼ Teaspoon Baking Powder
3 Teaspoons Cinnamon
3 Cups Plain Flour
1 Teaspoon Vanilla (Optional)

Method

  1. Sift together the flour, salt, bicarb soda, baking powder & cinnamon into a bowl put to one side.
  2. Lightly grease and line base of two loaf shaped over proof dishes.
  3. Beat eggs until light and foamy.
  4. Add sugar, vanilla and oil and beat until thick and mousse like.
  5. Stir in grated zucchini.
  6. Fold in flour mixture and walnuts.
  7. Pour mixture into oven dishes.
  8. Bake in a moderate oven set at 175°C for 1 to 1½ hours.
  9. Test if cooked through with skewer.

When it cools slice a big piece and enjoy with a cup of tea or coffee.
