Zucchini Soup
Thank you Rita Skinner from Queensland for this hearty healthy soup:
Ingredients
500g Zucchini
250g Carrot & Onion
4 Cups Chicken Stock
Salt & Pepper
60g Butter
1 Teaspoon Sugar
½ Teaspoon Nutmeg
Basil Leaves
¼ Cup Cream or Milk
Method
1 Saute vegetables for 5 minutes.
2 Combine sugar, stock, nutmeg, salt & pepper and add to vegetables.
3 Simmer until vegetables are tender.
4 Blend vegetables.
5 Add cream or milk until a creamy smooth consistency is achieved.
6 Ensure mixture does not boil after milk or cream is added.
7 Pour into bowls, sprinkle some basil leaves and serve.
