Ingredients:
500g Zucchini
2 Tablespoons Olive Oil
½ Cup Bread Crumbs (Fresh)
¼ Cup Parmesan Cheese
1 Medium Onion (Chopped)
2 Teaspoons Olive Oil (Additional)
Salt & Pepper
6 Eggs (Beaten)
2 Tablespoons Olive Oil (More)
Parmesen Cheese (Additional)
Method:
- Slice the zucchini and saute in the two tablespoons of Olive Oil for 10 munutes over a low heat.
- In a large bowl mix together the zucchini, bread crumbs and the ¼ cup of Parmesan cheese.
- Saute the onion in the two teaspoons of Olive Oil for five minutes.
- Add the onion to the zucchini mixture with the beaten eggs.
- Heat the oil in a large frying pan and pour the zucchini and egg mixture into it.
- Cover the frying pan and cook until the bottom of the zucchini mixture is set and slightly brown.
- Sprinkle with a hand full of Parmensen cheese and place pan under a hot griller.
- Cook until mixture is set and golden brown.
