Zucchini With Eggs

Cut this very easy and delightful Greek style vegitarian dish into six wedges and serve hot or cold. Makes a great Sunday breakfast or eat as a snack if you're feeling peckish.

Ingredients:

500g Zucchini
2 Tablespoons Olive Oil
½ Cup Bread Crumbs (Fresh)
¼ Cup Parmesan Cheese
1 Medium Onion (Chopped)
2 Teaspoons Olive Oil (Additional)
Salt & Pepper
6 Eggs (Beaten)
2 Tablespoons Olive Oil (More)
Parmesen Cheese (Additional)

Method:

  1. Slice the zucchini and saute in the two tablespoons of Olive Oil for 10 munutes over a low heat.

  2. In a large bowl mix together the zucchini, bread crumbs and the ¼ cup of Parmesan cheese.
  3. Saute the onion in the two teaspoons of Olive Oil for five minutes.
  4. Add the onion to the zucchini mixture with the beaten eggs.
  5. Heat the oil in a large frying pan and pour the zucchini and egg mixture into it.
  6. Cover the frying pan and cook until the bottom of the zucchini mixture is set and slightly brown.
  7. Sprinkle with a hand full of Parmensen cheese and place pan under a hot griller.
  8. Cook until mixture is set and golden brown.
