Hillcrest Yarra Valley Cabernet Sauvignon 2003

This is a very good example of Yarra Valley Victorian Cabernet
Sauvignon and why the region has established respect for its
performance with regard to making quality examples of this
varietal.
A violet ripe plum garnet red in colour, the nose is quite
powerful, yet elegant and complex.
Alluring ripe spicy fruit aromas emanate. Think rich blackcurrants
and mulberries. Persistent distinct deep concentrated and
potent fruit flavours which are also intensely varietal.
Hints of capsicum, liquorice, chocolate and tobacco support
the primary fruit characters on the palate.
An extended length of finish exists with cedar and spicy
oak characters extracted from subtle French oak influence.
Smooth, silky, well integrated fruit tannins result in quite
an approachable style of wine but also one that should cellar
and improve at least 5 -7 plus years.
Have this with a char grilled sirloin steak. Around $36.

General features of Cabernet Sauvignon:
The taste/aroma is predominantly blackcurrant and peppery,
but variations include touches of redcurrant, plum or even
blackberry and, in the cooler climates, mint.
Cellaring for a couple of years softens the blend and eases
the dry-mouth, tannin taste. But Cabernet Sauvignon is a very
versatile wine. Don't hold back, it can still be enjoyed when
young!
Perfect to enjoy with red meat, including steak, roast lamb,
kangaroo and game.
