This McLaren Vale South Australian winery has produced a
stunning Adelaide Hills wine that profoundly emanates varietal
sauvignon blanc aromas.
It leaves you with no doubt over what and who it is. People
gravitate to extremes as to whether they like Sauvignon Blancs
or not. I like it and particularly this one.
A brilliant wine trumpeting a pale green yellow colour. Powerfully
aromatic emanating the vibrancy and intensity of its youth.
Think strong tinned asparagus and capsicum on the nose.
Lean bodied and zesty with a good strong acid backbone. An
extended length of flavours explodes onto the palate, especially
of tropical fruit. Perfect with some sautéed scallops.
A very good wine and an excellent example of varietal cool
climate Adelaide Hills Sauvignon Blanc priced well at around
$16.

General features of Sauvignon Blanc:
The taste and aroma, depending on growing conditions and whether
it is oaked or unoaked, can be very grassy, herbaceous, even
citric. Sometimes it can be acidic to the point of having
a very pungent aroma, giving a crisp finish. It can be very
fruity with elements of passionfruit, maybe banana.

The acidic taste works in your favour with oily-based dishes
such as salads, and it is perfect with lobster, oysters, scallops
or in fact any type of fish.
