Asparagus Bake Recipe

This Asparagus Bake is a perfect side dish to serve (either hot or cold) at your next BBQ. It's also an ideal vegetarian meal as it's an excellent source of fibre and provides a rich source of vitamins and minerals. Serves 6-8.



  • 750g Fresh Asparagus
  • 1½ Teaspoons Salt
  • ¼ Teaspoon Pepper
  • ¼ Teaspoon Paprika
  • 2 Eggs (Separated)
  • 2 Tablespoons Butter
  • 2 Tablespoons Plain Flour
  • ¼ Teaspoon Pepper
  • 2 Cups Milk
  • ½ Cup Cream
  • Bread Crumbs



  1. Snap (cut) off the tough ends of the asparagus stalks and cook in boiling salted water until tender. Drain and chop.
  2. Mix the chopped asparagus with the salt (1½ teaspoons), pepper, paprika and well beaten egg yokes.
  3. Melt the butter in a saucepan and stir in the flour, salt (1 teaspoon), and pepper. Cover over a low heat and cook for one minute.
  4. Slowly add the milk and cream, stirring constantly until smooth and thick.
  5. Pour this white sauce onto the asparagus mixture and blend thoroughly.
  6. Beat the egg whites until stiff and gently fold into the mixture.
  7. Sprinkle the bread crumbs onto a well buttered ring mould.
  8. Pour in the asparagus mixture and place in a pan of warm water.
  9. Bake in a 180°C (350°C) oven for 45 minutes.
