Ossobuco Recipe
Serve up your easy to make and distinctly flavoured Ossobucco sprinkled with grated lemon rind and chopped parsley on a bed of Arborio rice or a side dish of boiled Desiree potatoes and broccoli. Serves 4-8.
Ingredients
- 8 Veal Shanks
- ½ Cup Flour
- Salt & Pepper
- ¾ Cup Butter (or Margarine)
- ¾ Cup Dry White Wine
- 8 Large Tomatoes (Peeled & Chopped)
- 2 Cloves Garlic (Crushed)
- 1½ Teaspoons Grated Lemon Rind
- 3 Tablespoons Chopped Parsley
Method
- Season the flour with the salt and pepper.
- Roll the shanks in the seasoned flour.
- Melt the butter (margarine) in a large saucepan and brown the shanks on all sides.
- Add the wine and cook over a low heat for ten minutes.
- Add the tomatoes and the garlic, cover and simmer for about 1½ hours.
