Ossobuco Recipe

Serve up your easy to make and distinctly flavoured Ossobucco sprinkled with grated lemon rind and chopped parsley on a bed of Arborio rice or a side dish of boiled Desiree potatoes and broccoli. Serves 4-8.

Ingredients

  • 8 Veal Shanks
  • ½ Cup Flour
  • Salt & Pepper
  • ¾ Cup Butter (or Margarine)
  • ¾ Cup Dry White Wine
  • 8 Large Tomatoes (Peeled & Chopped)
  • 2 Cloves Garlic (Crushed)
  • 1½ Teaspoons Grated Lemon Rind
  • 3 Tablespoons Chopped Parsley

 

Method

  1. Season the flour with the salt and pepper.
  2. Roll the shanks in the seasoned flour.
  3. Melt the butter (margarine) in a large saucepan and brown the shanks on all sides.
  4. Add the wine and cook over a low heat for ten minutes.
  5. Add the tomatoes and the garlic, cover and simmer for about 1½ hours.
