Roast Pork Recipe
Serve your Roast Pork (or Maiale Arrosto) steaming surrounded by roast sweet potatoes (cut into slices) and whole carrots with steamed broccoli. Great for that Sunday bake. Serves six.
Ingredients:
- 2kg Loin of Pork
- 4 Garlic Cloves (Sliced)
- ½ Onion (Minced)
- 2 Tablespoons Olive Oil
- Pinch Marjoram
- Rosemary Leaves
- Salt & Pepper
- 1 Teaspoon Crushed Bay Leaf
- Water
Method:
- Remove the rind and half the fat from the loin.
- Make good sized incisions into the loin and insert a slice of garlic, minced onion mixed with oil and marjoram and a couple of rosemary leaves in each incision.
- Rub the meat with salt and pepper and sprinkle with crushed bay leaf.
- Place loin in a baking dish and pour a little water in the bottom of the pan.
- Bake in a 190°C (375°F) oven for about 2½ hours.
