Spinach & Cheese Dumplings Recipe

Serve your Spinach & Cheese Dumplings up hot spread with melted butter and sprinkle with Parmesan cheese. Your mouth will water as you take in the aroma. Serves six.

Ingredients:

  • 500g Spinach
  • ¼ Cup Butter or Margarine
  • 250g Ricotta Cheese
  • 2 Cups Flour
  • 2 Eggs
  • ¼ Cup Butter (Melted)
  • Parmesan Cheese
  • Salt & Pepper

Method:

  1. Wash the spinach thoroughly and cut out the white core.
  2. Cook, covered, in a saucepan and add salt & pepper to taste (do not add extra water).
  3. Rub spinach through a fine sieve.
  4. Cream the ¼ cup butter or margarine with the Ricotta cheese and add to the spinach. Mix very well.
  5. Beat in the flour, eggs and salt & pepper to taste.
  6. With floured hands, shape into small balls.
  7. Drop a couple of balls at a time into boiling salted water. (The dumplings are cooked when they rise to the top.)
  8. Remove the dumplings and keep warm while you cook the rest of the balls.
