Spinach & Cheese Dumplings Recipe
Serve your Spinach & Cheese Dumplings up hot spread with melted butter and sprinkle with Parmesan cheese. Your mouth will water as you take in the aroma. Serves six.
Ingredients:
- 500g Spinach
- ¼ Cup Butter or Margarine
- 250g Ricotta Cheese
- 2 Cups Flour
- 2 Eggs
- ¼ Cup Butter (Melted)
- Parmesan Cheese
- Salt & Pepper
Method:
- Wash the spinach thoroughly and cut out the white core.
- Cook, covered, in a saucepan and add salt & pepper to taste (do not add extra water).
- Rub spinach through a fine sieve.
- Cream the ¼ cup butter or margarine with the Ricotta cheese and add to the spinach. Mix very well.
- Beat in the flour, eggs and salt & pepper to taste.
- With floured hands, shape into small balls.
- Drop a couple of balls at a time into boiling salted water. (The dumplings are cooked when they rise to the top.)
- Remove the dumplings and keep warm while you cook the rest of the balls.
