Tomato Pudding Recipe
Here's an innovative and easy to prepare Vegetarian dish, a Tomato Pudding. Serve this dish in small bowls as an entrée and enjoy the unique flavour. Serves 4.
Ingredients:
- 3½ Cups Sieved Tomatoes
- ½ Teaspoon Salt
- ¼ Teaspoon Pepper
- 1 Cup Brown Sugar
- 8 Slices Bread (Cubed)
- 85g Butter
Method:
- Mix together the sieved tomatoes, salt, pepper and sugar in a saucepan and bring to a boil.
- Place the bread cubes in a well buttered casserole dish.
- Melt the butter and pour over the bread. Toss to mix.
- Pour the hot tomato mixture over the buttered bread cubes and bake uncovered in a 180°C (350°F) oven for 45 minutes.
